1 1/2 cup Monterey jack cheese (or Mexican melting cheese, or any cheese of choice)
3 large tortillas
Jalapeños, salsa, Pico de Gallo, lettuce, tomatoes, black olives, etc (optional)
Lightly spray tortillas with some type of oil, then turn over onto parchment paper or aluminum foil.
You will be putting the chicken and cheese onto the non-sprayed side. On half of each tortilla spread 1/4 cup of cheese, then 1/2 of the chicken, then another 1/4 cup of cheese. Add optional ingredients of choice, then either cook in a panini press, a George Foreman, or in a skillet on the stovetop.
They can also be broiled. but watch them very closely.
