Pumpkin Bread
The love my family has for this pumpkin bread pre-dates our marriage. My kids bio-mom made this recipe (or at least something close to it) and at a moment of weakness she decided to share it with me. It started out as just a holiday tradition, but now I make it several times throughout the year.
Ingredients
- 3 cups all purpose flour
- 3 cups sugar
- 1 cup oil
- 4 eggs
- 2/3 cup water
- 1 15-ounce can of pumpkin
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon ground cloves
Directions
- In very large mixing bowl, mix sugar, eggs, oil, water, eggs and pumpkin together with a wire wisk. Set aside.
- In another mixing bowl; combine flour, salt, allspice, cinnamon, nutmeg, baking soda, and baking powder.
- Gradually add the dry ingredients to the wet ingredients with wire whisk until batter is mixed through.
- Butter two large loaf pans and then fill halfway with batter.
- Bake at 350° for about an hour, or until toothpick comes out clean.
