Pumpkin Bread

The love my family has for this pumpkin bread pre-dates our marriage.  My kids bio-mom made this recipe (or at least something close to it) and at a moment of weakness she decided to share it with me. It started out as just a holiday tradition, but now I make it several times throughout the year.

Ingredients

  • 3 cups all purpose flour
  • 3 cups sugar
  • 1 cup oil
  • 4 eggs
  • 2/3 cup water
  • 1 15-ounce can of pumpkin
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cloves

Directions

  1. In very large mixing bowl, mix sugar, eggs, oil, water, eggs and pumpkin together with a wire wisk.  Set aside.
  2. In another mixing bowl; combine flour, salt, allspice, cinnamon, nutmeg, baking soda, and baking powder.
  3. Gradually add the dry ingredients to the wet ingredients with wire whisk until batter is mixed through.
  4. Butter two large loaf pans and then fill halfway with batter.
  5. Bake at 350° for about an hour, or until toothpick comes out clean.
