Chocolate Cheesecake

Ingredients crust

  • 1/3 cup butter, melted
  • 1 1/4 cups graham cracker crumbs (chocolate graham cracker crumbs may be substituted)
  • 1/4 cup sugar

Ingredients cake

  • 3 8-ounce packages cream cheese, softened
  • 1 14-ounce can sweetened condensed milk
  • 2 cups semi-sweet (or milk) chocolate chips, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 300°F. Combine butter, graham cracker crumbs and sugar and press on bottom of 9-inch springform pan.
  2. In large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add remaining ingredients; mix well. Pour over crust in springform pan.
  3. Bake 65 minutes or until cake center is set. Cool to room temperature and then cool in fridge for at least 4 hours.  Store leftovers covered in refrigerator. Reduce cooking time for a 10 inch pan by about 10 minutes, and increase cooking time for an 8 inch pan by about 10 minutes.
