Mississippi Mud Cake

Ingredients Cake

  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup cocoa
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 10.5 ounce bag of marshmallows (use after cake is baked)

Ingredients Frosting

  • 1/2 cup butter (1 stick)
  • 6 Tablespoons milk
  • 3 heaping tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar

Directions Cake

  1. Heat oven to 350°F. Grease and flour 9×13 inch baking pan.

  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.

  3. Add eggs, milk, oil and vanilla; using mixer, beat on medium speed for 2 minutes.

  4. Stir in boiling water (batter will be thin). Pour batter into prepared pan.

  5. Bake 30 to 35 minutes and immediately top with marshmallows when you remove cake from oven.

Directions Frosting

  1. Combine butter and cocoa powder then add powdered sugar, milk, and vanilla extract.
  2. Spread over cooled cake
