Blackened Shrimp and Pasta
Ingredients
- 8 ounces pasta noodles, cooked el dente (I prefer penne)
- 1 pound large shrimp, raw, deveined, tail removed
- 2 tablespoons blackened seasoning
- 1 tablespoon butter
- 1 cup heavy cream
- 1 tablespoon tomato paste
- ¼ cup sour cream
- ½ cup parmesan cheese, grated
- 1 cup sweet corn, canned or frozen
Directions
- Add 8 ounces pasta to salted water and cook to el dente while working on the shrimp and sauce.
- Add 2 tbsp blackened seasoning to the shrimp and set it aside.
- Melt the 1 tbsp butter in a large skillet, and then add the shrimp in a single layer and cook for 2-3 minutes, then turn over and cook for another 2-3 minutes. set aside while finishing the sauce. Try not to overcook the shrimp, it cooks very fast.
- To the same skillet over medium heat, add 1 cup of heavy cream. Bring the heavy cream to a low simmer, scraping up the brown bits from the bottom of the pan as you go.
- Reduce the heat to low and add 1 tbsp tomato paste, 1/4 cup sour cream, and 1/2 cup parmesan. Stir together until the parmesan is completely melted.
- Stir in the cooked pasta, shrimp, and 1 cup corn.
