Butter Beans


  • 16oz bag large Lima Beans
  • 1 stick salted  butter
  • salt


Rinse beans and put in large saucepan with a tablespoon of salt and water (about 1 inch above beans).  Bring to a boil, cover, and let sit for one hour.  Pour beans into colander, rinse beans, replacing water with fresh water and adding the butter.  Bring to a boil and then turn to medium – low and cook until beans are soft. (4-5 hours)  You can them salt according to taste. Best served over cornbread.
