Mississippi Pot Roast


  • 1 3-pound beef roast
  • 2 tablespoons olive oil
  • 1 packet ranch dressing mix
  • 1 packet Au Jus mix
  • 6 pepperoncini peppers
  • 1 stick butter
  • salt
  • pepper


  1. Lightly salt and pepper roast, then sear, on both sides, on stove in olive oil on high heat.
  2. Place roast in crockpot.
  3. Melt the butter and mix in the Au Jus and Ranch Dressing Mix. Pour over the pot roast and put pepperoncini peppers on top.
  4. Cook on low for 8-10 hours, or on high for 4-5. It will be very tender when it’s ready and will easily break apart.
