Pico de Gallo

Who doesn’t love a good Pico de Gallo?  This pico is amazing on so many of my Mexican dishes. You can choose how large you want the tomatoes and onions. I prefer to have the onions diced fairly small and the tomatoes chopped a little larger. I prefer dried cilantro over fresh cilantro as well, but if you chose to use fresh, you should use about a tablespoon.


  • 4 plum tomatoes, chopped
  • 1 small white onion, diced small
  • 1 teaspoon dried cilantro
  • 1 jalapeño, chopped (optional)
  • 1 tablespoon lime juice
  • salt to taste


  1. Combine all ingredients and refrigerate a minimum of an hour before stirring and serving.
