Cheddar Fathead Crackers
- 6 ounces shredded cheddar
- 3 ounces almond meal/flour
- 2 tablespoons cream cheese
- 1 egg
- 3/4 teaspoon salt
Mix the cheese and almond flour in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
Stir then microwave on HIGH for another 30 seconds.
Add the egg and salt, mix gently.
Place in between 2 pieces of baking parchment paper and roll thin. Remove the top parchment and cut into cracker sized pieces with a pizza cutter. (this perforates the crackers)
Gently slide the crackers onto a cookie sheet and cook at 425F for 12-15 minutes, or until brown.
- When done, you can break the crackers along the perforation lines. Store in fridge.
