Coconut Chocolate Chip Cookies

Ingredients

  • 1 cup butter
  • 1 cup white sugar 
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 2 cups sweetened coconut flakes

Directions

  1. Preheat the oven to 375°F.
  2. In a large bowl, cream together the butter (1 cup) brown sugar (1/2 cup) and white (1 cup) sugar until light and fluffy. Beat in the eggs (2) one at a time, then stir in the vanilla (1 tsp).
  3. Combine the flour (2 1/4 cup) baking soda (1 tsp) and salt (1 tsp) and stir into the creamed mixture. Fold in chocolate chips (2 cups) and coconut (2 cups). Drop by rounded spoonfuls onto cookie sheets.
  4. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
