Easy Chicken Quesadillas
Ingredients
- 1 1/2 cup shredded chicken
- 1 1/2 cup Monterey jack cheese (or Mexican melting cheese, or any cheese of choice)
- 3 large tortillas
- Jalapeños, salsa, Pico de Gallo, lettuce, tomatoes, black olives, etc (optional)
Directions
- Lightly spray tortillas with some type of oil, then turn over onto parchment paper or aluminum foil.
- You will be putting the chicken and cheese onto the non-sprayed side. On half of each tortilla spread 1/4 cup of cheese, then 1/2 of the chicken, then another 1/4 cup of cheese. Add optional ingredients of choice, then either cook in a panini press, a George Foreman, or in a skillet on the stovetop.
- They can also be broiled. but watch them very closely.
