Macaroni Salad


  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • salt and pepper
  • 1 chopped pickle


  1. Cook macaroni as package states, then drain and rinse until cool.
  2. Add macaroni to large mixing bowl, then add mayonnaise, pickles, and salt and pepper to taste.  The amount of mayonnaise may vary depending on how you personally like it, so start with smaller amounts and then add more until it’s the consistency that you like.  Same with salt and pepper and pickles, you can always add more until you get it just the way you like it.
  3. You can also make much smaller batches and add enough of the other ingredients to make it the way you like it.  This will last about 5 days in the fridge, add a teaspoon of milk and mix before serving if it’s been in fridge, it’ll make it creamier.
