Season both sides of the chicken with cajun seasoning.
Heat oil in a non-stick skillet on medium high heat. Add chicken and sear on each side for about 3 minutes, then lower heat and cook until at least 170°F.
Slice chicken and cover to keep warm and set aside while making the mac and cheese

Melt the butter in a sauce pan over medium heat, then add the flour and whisk constantly for about 2 minutes until the mixture turns light brown.
Lower the heat and gradually pour in the warm milk, once it is all in there, bring temp back up to medium, whisking constantly for about 5 minutes or until thickened.
Add the salt, cajun seasoning, and the cheeses, stirring to melt.
Pour the sauce over the top of the cooked macaroni. Stir to combine.
