Cauliflower Mash
Ingredients
3 C cauliflower, chopped into small florets
2 tablespoons sour cream
4 tablespoons cream cheese (2 oz)
2 tablespoons butter
1 cup shredded cheddar cheese
3 tablespoons shredded parmesan cheese
1 tablespoons chopped jalapeño
Salt
Pepper
Directions
Pre-heat the oven to 325°F, and either steam or boil cauliflower for about 8 minutes, then salt well and let sit in colander for a few minutes to remove excess water.
After a few minutes, add cauliflower to a food processor; blend until it forms a rice-like consistency.
Add sour cream, butter, cream cheese and pepper to cauliflower; puree until smooth.
Add 1/2 of the shredded cheddar cheese and the shredded parmesan to the cauliflower; blend once more until fully incorporated. Add jalapenos and pour into a baking dish. Bake 15 minutes until set, and then remove from oven, add the remaining cheese on top, Bake an additional 10 minutes until cheese is melted.
