Monterey Chicken
Ingredients
- 4 boneless, skinless, chicken breasts
- 8 slices bacon
- 1/3 cup chicken broth/stock
- 4 tbsp barbecue sauce
- 4 ounces, or 4 slices of Colby jack cheese
- 1 diced tomato
- 2 green onions sliced
Directions
- Fry bacon in a large skillet until crispy.
- While bacon is frying, pound chicken breasts to even thickness and then lightly season with salt and pepper.
- Remove bacon from skillet and drain on a paper-towel lined plate. Leaving the bacon grease in there.
- Turn heat to medium high and brown chicken on both sides (2 to 3 minutes per side.)
- Pour 1/3 cup chicken broth over the chicken breasts and cover skillet with a lid. Cook until chicken is done, about 4 to 5 minutes depending on the thickness of the chicken.
- Turn off heat and spread 1 tbsp barbecue sauce on top of each chicken breast.
- Top each chicken breast with 2 slices of bacon, and then add the cheese.
- Top with tomato and green onions.
