Instant Pot Mississippi Pot Roast

  • 1 3-pound beef roast
  • 2 tablespoons olive oil
  • 1 packet ranch dressing mix
  • 1 Au Jus packet
  • 1 jar pepperoncinis with juice
  • 1/2 cup beef broth
  • 1 stick butter
  • salt
  • pepper

Directions

  1. Lightly salt and pepper roast, then sear, on both sides, in instant pot in olive oil on high heat.
  2. Melt the butter and mix in the Au Jus packet, the ranch dressing mix, and the beef broth. Pour over the pot roast with the pepperoncinis and juice.
  3. Cook on high pressure for 60 minutes, then allow pressure to release naturally. It will be very tender when it’s ready and will easily break apart.
