Instant Pot Mississippi Pot Roast
                        
                        
            
- 1 3-pound beef roast
 - 2 tablespoons olive oil
 - 1 packet ranch dressing mix
 - 1 Au Jus packet
 - 1 jar pepperoncinis with juice
 - 1/2 cup beef broth
 - 1 stick butter
 - salt
 - pepper
 
Directions
- Lightly salt and pepper roast, then sear, on both sides, in instant pot in olive oil on high heat.
 - Melt the butter and mix in the Au Jus packet, the ranch dressing mix, and the beef broth. Pour over the pot roast with the pepperoncinis and juice.
 - Cook on high pressure for 60 minutes, then allow pressure to release naturally. It will be very tender when it’s ready and will easily break apart.
