Jamaican Jerk Chicken
The cooking method is versatile here. If using a cast iron skillet, after searing the chicken, bake at 350° for about 20 minutes, then check temperature before serving. Chicken should be cooked to an internal temperature of 170°. If you are not using an oven proof skillet, turn temperature to medium-low and cook on stovetop until 170°.
Ingredients
- 3 chicken breasts
- 2 tablespoons olive oil
- Jamaican Jerk Marinade
Directions
- Prepare marinade, put in ziplock bag, add chicken, and let sit for a few hours. This can even be done a day or so in advance.
- Add oil to skillet and heat to medium-high heat, remove chicken from marinade, sear for three minutes on each side.
- Add about 1/2 of the marinade, then choose a cooking method to finish the chicken.
