Cheddar Fathead Crackers


  • 6 ounces shredded cheddar 
  • 3 ounces almond meal/flour
  • 2 tablespoons cream cheese
  • 1 egg
  • 3/4 teaspoon salt


  1. Mix the cheese and almond flour in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
  2. Stir then microwave on HIGH for another 30 seconds.
  3. Add the egg and salt, mix gently.
  4. Place in between 2 pieces of baking parchment paper and roll thin. Remove the top parchment and cut into cracker sized pieces with a pizza cutter. (this perforates the crackers)
  5. Gently slide the crackers onto a cookie sheet and cook at 425F for 12-15 minutes, or until brown.
  6. When done, you can break the crackers along the perforation lines. Store in fridge.
